Lemon-buttermilk pound cake



Ingredients

➡FLOUR 3/4 cup

➡SUGAR 3/4 cup

➡SALT 1/4 tsp

➡UNSALTED BUTTER 1/2 cup

➡EGGS 2 large

➡BAKING POWDER 1 tbs

➡LEMON JUICE 2 tbs

➡LEMON ZEST 1 tbs

➡BUTTERMILK 1/2 cup


FOR GLAZE

➡POWDERED SUGAR 1 cup

➡LEMON RIND 8 tbs

➡LEMON JUICE 3 tbs

➡LEMON ESSENCE a few drops


INSTRUCTIONS


The lemon should never be missing in a kitchen. It is a citric that gives a very special flavor and a lot of vitamin C. It also gives a different touch practically everything that is put. To do this pound cake, it is very good to have an electric mixer based because it will be beating about 30 minutes. Otherwise, with a little patience and love will be enough.

Mix butter and sugar with electric mixer at medium speed, until creamy. This process should last at least 10 minutes. The cake will be spongy if you take this step with care.

Prepare the syrup by mixing the ingredients in a pot on low heat until a honey is formed. Do not introduce anything to stir, mix stirring gently the pot.

With a fine knife holes are made to the puncture so that, when bathing with the syrup, it penetrates well.

Cover the pound cake with the syrup and sprinkle with lemon zest.



When choosing your lemons, prefer those with smooth and shiny skin. Grate the lemons before extracting the juice. You will see that you will get more juice if you squeeze them to room temperature.
