LEMON LOAF
Aaaaaah…Super moist and soft !!! Just follow the recipe as directed and you’ll have a fabulous cake to enjoy for breakfast or as a sweet treat Seriousely, I’ll be making it again for the fourth time this week for my lemon-loving husband !! This recipe is a must try to lemon lovers out there!
I USE FOR THE RECIPE :
– Eggs: 3 large
– Cake flour: 1 plus 1/2 cups
– Granulated sugar: 1 cup
– Lemon juice: 1/3 cup
– Coconut oil: 1/2 cup
– Butter: 2 tbsp (softened)
– Lemon extract: 1 tsp
– Vanilla extract: 1 tsp
– Baking powder: 1 tsp
– Baking soda: 1/2 tsp
– Salt: 1/2 tsp
#FOR THE LEMON ICING:
– Powdered sugar: 1 cup + 1 tbsp.
– Whole milk: 2 tbsp
– Lemon extract: 1/2 tsp
PREPARATION :
1. To start with, mix together the flour with the baking soda, baking powder, and salt in a medium bowl.
2. Using your electric mixer, blend the eggs, white sugar, softened butter, vanilla extract, lemon extract, and lemon juice in a separate bowl.
3. Make sure to mix the dry ingredients with the wet ingredient and combine them until soft with a wooden fork.
4. And please stir in the oil, and blend properly for few seconds more.
5. You’ll want to pour the batter into a lightly greased loaf pan.
6. Now, bake for 40 to 45 minutes at 350 degrees F, or until a toothpick trapped in the cake’s middle comes out clean. After that, I removed it from the oven.
7. Prepare the icing, in the same time, by combining all the icing ingredients in a small bowl. Immediately beat with an electric mixer at low speed to create the lemon icing.
8. While it is cooled, you may remove the loaf from the pan and frost the topped with the icing.
9. Until slicing; always remember to allow thermion loaf in the fridge just until the icing set in.
