Ingredients
- -Half a kilo of medium or large shrimp (peeled and washed well with water and flour);
- - A large onion is cut very small (with a knife or a food processor);
- - a horn of hot red pepper, finely chopped (you can add to it if you want the sauce to be hot);
- - 5 garlic cloves, crushed or cut into very small pieces;
- - green basil leaf buns, turned;
- - 1/4 cup hot water;
- - 3 tablespoons of frying oil;
- - 2 tablespoons of soy sauce;
- - Two tablespoons of a tamarind center;
- - 1 tablespoon of tomato sauce or 1/4 cup tomato puree;
- - a quarter tablespoon of turmeric;
- - A little salt (can be dispensed with).
How to Prepare
- First: As is the case in stir fry recipes on the Asian way, it is desirable that all the ingredients be ready in terms of cutting and being close to the place of cooking, due to the speed required to prepare the dish.
- Second: If a food processor is available, we can slice the onion, garlic and pepper in large pieces and put them in it until they are minced into very small pieces. If not available, we engage each of them separately.
- Third: We take one shrimp and its nuts in a mortar and add to it the sauce or tomato puree, salt or fish sauce.
- Fourth: In a large frying pan, put the frying oil and add to the onion, garlic and pepper and stir continuously for several minutes until the strong smell of the mixture appears and the onion begins to ripen. Then we add a mixture of mashed shrimp and paste tomatoes.
- Fifth: We leave the mixture for two minutes on the fire while continuing to stir, then add the shrimp and do not stop stirring. After the shrimp mixes well, add the water.
- sixth: After adding the water, we continue stirring continuously and add turmeric, tamarind center, soy sauce and basil. Leave it for two last minutes, while continuing to stir, and serve immediately with the crust or rice.
