Zucchini Tagine With Minced Meat

 


Ingredients

  • To prepare the tomato sauce:

  1. Tomato paste: 1 tablespoon
  2. Tomato sauce: 1 cup
  3. Salt, to taste
  4. Black pepper to taste
  5. Mixed Spices: To taste
  • Zucchini: 6 pieces
  • Ground meat: 500 grams
  • Feta cheese: Three quarters of a cup
  • Cheddar cheese: three quarters of a cup (yellow / or gouda cheese / grated)
  • Onions: 1 piece (chopped)
  • Parsley: 1/4 cup (or celery / chopped)
  • Tomato paste: 1 tablespoon
  • Mixed spices: 1 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: half a teaspoon

How to prepare

  1. Cut the zucchini in half lengthwise and empty the pulp with a small spoon, keeping the zucchini pulp aside.
  2. In a saucepan, saute the onions a little.
  3. Add the meat, parsley (or celery), and the zucchini pulp.
  4. Season with mixed spices, salt and black pepper.
  5. Add tomato paste and mix the ingredients.
  6. Leave the pot on a low heat for 10 minutes.
  7. To prepare tomato sauce: in a saucepan over a stove, put tomato sauce and tomato paste.
  8. Season with salt, black pepper and mixed spices.
  9. Leave the sauce until it begins to boil.
  10. Pour the sauce into the bottom of a rectangular tray.
  11. Arrange the zucchini seeds over the sauce.
  12. Fill each zucchini with the meat mixture.
  13. Spread the feta cheese over the filling on each piece of zucchini, then the cheddar cheese.
  14. Put the tray in a preheated oven on medium heat for 45 minutes.
  15. Serve hot with bread or rice.
